My family keeps a batch of these on hand for quick and nutritious breakfasts and snacks. The ingredients are something that most people have in their homes, requiring no additional trips to the grocery store. The final product is perfectly portion controlled, low calories, and super satisfying. This beats the pre-packaged oatmeal squares you can buy at the store any day! Number of Servings: 12

Ingredients

    2 cups old fashioned oatmeal, dry
    1 tsp cinnamon
    1 tsp nutmeg
    1/4 cup sugar (can use more or less, to taste)
    1 1/2 tsp baking powder

    1 banana, mashed
    1 cup unsweetened apple sauce
    1 cup light vanilla soymilk
    1.5 tsp vanilla extract

    Nice items to add, but not included in nutritional calculations:
    1 apple, chopped
    1 handful raisins
    6 tsp ground flax
    1/4 cup dried fruit

Directions

Mash banana. Combine wet ingredients. Combine dry ingredients. Add wet and dry ingredients and mix. Place in lined muffin tins, and bake at 350 for 30 minutes. Makes 12.
