Delicious Vegetable Soup

Introduction

This soup is very easy to make and low in calories. The spices keep the broth from tasting bland. If using dried spices in place of fresh, cut the amounts in half.
Add a nice piece of bread (and maybe a salad too!) and you have a tasty meal!

Number of Servings: 10

Ingredients

    2 tbsp olive oil
    1 qt low sodium vegetable broth
    1 1/2 C water
    1/2 C tomato juice, no salt added
    3 cloves garlic, minced
    2 bay leaves, whole
    1 tbsp fresh rosemary, chopped
    2 tsp fresh thyme
    1 tbsp black pepper
    2 tsp salt
    3 leeks, bulbs and lower leaves chopped
    2 C carrots, cut into discs
    2 C potatoes, cubed
    1 C peas, fresh or frozen
    1 C green beans, fresh or frozen
    2 ears of corn, kernels sliced off*
    2 C plum tomatoes, seeded, peeled and chopped
    2 C zucchini, chopped


    * the best way to slice the kernels off of an ear of corn is to place inside a large bowl and carefully use a sharp knife to slice down. The kernels will stay in the bowl and not fly all over the counter.

Directions

Heat a large pot over medium low heat. Add olive oil and once warmed, add garlic, leeks and salt. Cook for 5-7 minutes or until leeks are soft. Add carrots, green beans, potatoes and zucchini; cook for 5 more minutes.
Increase heat to medium high and add broth and water and bring to a slow boil. Add bay leaves, rosemary, thyme and pepper; stir. Add remaining vegetables and stir thoroughly. Bring heat to low, cover and simmer for 45 minutes.
Fish out the bay leaves and serve

Makes 10-12 servings.
