Introduction

Quick hearty meal to throw in the slow cooker and head to work. Loads of veggies and a great flavour from the sausage makes it feel like good comfort food. Quick hearty meal to throw in the slow cooker and head to work. Loads of veggies and a great flavour from the sausage makes it feel like good comfort food.
Number of Servings: 4

Ingredients

    3 sausage links
    1 cup mushrooms sliced
    1 cup celery chopped
    1 onion diced
    1 cup carrots chopped
    2 cup fresh spinach
    2 cup chopped tomatoe (may used diced canned)
    2 cloved of garlic pressed
    3 medium potatoes cubed
    2 cups of low sodium beef broth (or bouliion)

Directions

saute onion and garlic
place in slow cooker
brown sausage and chop into slices
add to slow cooker
add remaining ingredients to slow cooker
low 6-8 hours, high 4-6 hours.
May add spices (red pepper flakes for heat) my kids like it plain (i like the red pepper flakes)
