Yummiest cookies EVER! Yummiest cookies EVER!
Number of Servings: 30

Ingredients

    1 Cup LIbby's Canned Pumpkin
    3/4 Cup Sugar
    1/4 Cup Canola Oil
    1/4 Cup Applesauce
    1 Egg
    2 Cups Flour
    2 tps. Baking Powder
    1 tsp. Cinnamon
    2 tsp. Pumpkin Pie Spice
    1/2 tsp. Salt
    1 tsp. Baking Soda
    1 tsp. Milk (Lactose Free in my case)
    1 1/2 Cups Semi Sweet Chocolate Chips
    1 tsp. Vanilla

Directions

In a small bowl, dissolve baking soda in milk; set aside. In large bowl, add pumpkin, sugar, oil, applesauce, and egg; stir. Add flour, baking powder, cinnamon, pumpkin pie spice, salt, and baking soda mixture. Mix well. Stir in vanilla and chocolate chips. Spoon onto cookie sheet. Bake at 375 for 10 minutes. Makes 30 2 Tbsp. cookies

  • Very tasty and easy to make. I've never dissolved baking soda in milk before. Used regular and mini chocolate chips. Everyone loves them. Made closer to 40 cookies. - 10/23/09
