Introduction

Number of Servings: 6

Ingredients

    1/4 cup olive oil

    2 cups cauliflower
    2 medium potatoes
    1 large onion
    1 cup peas
    1 tomato
    1/2 baby zucchini
    2 cups baby carrots
    1 red pepper
    1 green pepper
    1 celery stalk


    SAUCE
    1 can tomato sauce
    .5 cup yogurt plain
    1 cup water

    5 cloves garlic
    1 tbs ginger root
    1 stick cinnamon
    5 cloves
    1 tsp garam malsa
    1 tsp tumeric
    1 1 tsp curry powder
    1/4 tsp black pepper
    salt to taste

    lemon juice

Directions

dice onions and place in large heated pot with olive oil cook until onions are transparent

chop all veggies in to desirable size add to pot

in blender mix all spices and ingredients for the sauce blend until smooth and spices are ground

Add sauce to pot

simmer for at least 1 hour until all veggies are soft

add a squeeze of lemon juice

serve with basmati rice or naan bread

Delicious the next day!!!
