Beef Barley Soup

Ingredients

    3/4 cup barley
    6 cups beef stock
    1/2 - 1lb. meat, leftover roast or round steak are good choices*
    1 tsp. Onion powder
    3 cups carrots, diced
    1 cup celery, diced
    1 tsp rosemary
    1/2 tsp. Thyme
    1 Bay Leaf

Directions

In a Dutch Oven, brown meat. Add Stock and bring to boil. Add barley and boil 1 hour. Add vegetables and seasonings and simmer at least 30 minutes. Makes 8 servings.
