Mix flour, salt, cocoa and baking soda in small mixing bowl. In large bowl, mix sugar, eggs, oil and vanilla extract. Add dry ingredients to wet ingredients and mix until smooth. Fold in zuchinni. Bake in 350 oven for 20-25 minutes, or until tootpick comes out clean.
I used wheat flour for half of what the recipe called for, and plain, fat-free yogurt instead of oil. It turned out great! I took it toa gathering, and people really liked it! Thanks for th egreat recipe!
Fantastic!! I made a few changes....used applesauce instead of oil, 1/2 cup mashed banana, 1/4 cup chocolate chips, and 1 tbl more cocoa. I used a regular cake pan!! It was great...my hubby who hates cake loved it!!
