Introduction

Since all the bad stuff is in the yoke I thought I would substitute hummus for some color and bit of flavor. Sun dried tomato is my favorite flavor to use in this recipe.
Since all the bad stuff is in the yoke I thought I would substitute hummus for some color and bit of flavor. Sun dried tomato is my favorite flavor to use in this recipe.

Number of Servings: 2

Ingredients

    4 hard boiled eggs (yokes removed)
    2 tbsp Hellmans low fat Mayo
    Hummus, 1 tbsp

Directions

Remove yokes from hard boiled eggs and chop.
Mix in mayo and hummus.

Mix in your favorite spices as it is a bit bland (but that is how I like it)

Add to salad plates, wraps, or just plain bread for a yummy and light sandwich.
