Sopapilla Cheesecake

Introduction

Smaller Reduced Fat version of the original Sopapilla Cheesecake, started as an experiment but turned out delish...quick and simple. Smaller Reduced Fat version of the original Sopapilla Cheesecake, started as an experiment but turned out delish...quick and simple.
Number of Servings: 8

Ingredients

    1-8oz Fat Free Cream Cheese
    3/4 cup sugar, seperated
    1/2 teaspoon vanilla
    1 can reduced fat cresent rolls
    1/2 teaspoon cinnamon

Directions

Preheat oven to 350. Beat cream cheese, half of the sugar and vanilla just till smooth. Pray bottom of 8 x 8 pan. Roll half the cresent rolls across the bottom of the pan. spread cream cheese mixture over the top. Place other half of cresents on top. Mix remaining sugar and cinnamon, sprinkle over top and bake 25 minutes until golden. Cut into 8 servings and enjoy.

  • I used 1/2 cup Splenda and 1/4 cup real sugar. I did use the recommended amount to mix in w/the crm. cheese but didn't use the rest for the top; just sprinkled on what looked right and probablly had about 1/8 cup left over. Splenda won't crystallize like sugar, but it tasted good enough to me. - 2/24/10
