1 cup slice onion
1 clove garlic, minced
1 cup unsweetned pineapple juice
1/4 cup tomato paste
2 tablespoons brown sugar
2 tablespoons soy sauce
1 tablespoon red wine vinegar
2 teaspoons curry powder
1 tablespoon all purpose flour
1.5 pounds lean boneless round steak, cut into 1 inch pieces
1 teaspoon olive oil
1 can drained sliced water chestnuts
1/2 medium size green pepper cut into strips
1/2 medium size red pepper cut into strips
8 strips lemon rind
Sprinkle flour over steak, tossing to coat well
Add olive oil if necessary to pan and saute steak pieces, stir-fry 3 minutes or until meat is browned on all sides. Add pineapple juice mixture and bring to a boil. Reduce heat to low; cover and simmer 30 minutes
Add water chestnuts, pepper strips and lemon rind to beef mixture, stirring to combine, cover and cook 15 additional minutes or until meat is tender. Remove and discard rind before serving.
Arrange 1 cup rice on each of 6 individual serving plates. Top with beef and veetable mixture Yield 6 servings. Rice is not included in caloric count.
