1 cup long-grain white rice
1/2 cup granulated sugar
1/2-1 cup plumped raisins
1 egg, beaten
1.5 cup milk/evaporated milk/coconut milk (nutritional info uses half 1% and half coconut milk)
1 tsp vanilla
LOTS of cinnamon to taste
Remove from heat and add sugar and plumped raisins.
Meanwhile, in a separate small bowl, beat and egg and add your milk and vanilla. Add to rice mixture. Return rice to stove and return to boil over medium-low heat stirring occasionally. Add lots of cinnamon.
Can be served either hot or cold.
