Introduction

Number of Servings: 6

Ingredients

    1 lb linguine (spaghetti will also work)
    2 tbsp olive oil
    6 slices bacon, chopped
    1/3 cup dry white wine
    3 large eggs
    salt and pepper to taste
    2/3 cup grated Parmesan or Romano cheese

Directions

Cook in a large pot as per package directions, 1 lb of pasta.

Meanwhile, in a small skillet, combine and cook olive oil and bacon - stirring occasionally. When the bacon is crispy, add wine and simmer until the wine is evaporated.

Beat together the eggs, salt and pepper and parmesan cheese.

Drain the pasta and return it to the pot. Immediately add the cheese mixture and the hot bacon, stirring to coat and letting the heat cook the eggs.

For variation, add mushrooms to the bacon mixture or other veggies of your choosing.

Makes 6 servings
