1 large potato
1 tbsp butter
2 tbsp fat free sour cream
2 tbsp low fat shredded cheddar cheese
Slice potato lengthwise. Scoop out potato from skin into a bowl, leaving about 1/4 inch around sides.
Add butter, cheese and sour cream and mash. Spoon back into skins. Sprinkle with paprika. Bake at 425 for 20 minutes.
