Rice Pudding

Introduction

good use of leftover rice. good for breakfast or dessert. if for a dessert serve half cup. good use of leftover rice. good for breakfast or dessert. if for a dessert serve half cup.

Ingredients

    3 c brown rice
    1.5 c milk (non fat is best!)
    1 egg beaten Optional i did it for nutrients
    currants about 1/8 cup
    cinnamon
    2 tbs brown sugar

Directions

Combine all and heat til a thick pudding. I do in a rice cooker on porrige cycle, but you can do on stove top, just make sure you don't scorch it.
you can add what ever dried fruit you want. i happened to grab currants, but it's good with craisins or raisins or chopped nuts etc. makes 4 one cup servings.
