Stir Fry Veggies for Chicken

Ingredients

    garlic
    1 T peanut oil
    .5 onion
    1 bunch scallions (1 cup)
    2 stalks celery sliced thin
    1 c (1 ) red pepper
    77 grams porta mushrooms
    1 tsp red sod tamari
    1-2 T cornstarch
    .25 c water
    1-1/2 lb. chicken breast (cut up)

Directions

Marinate chicken breast s (cut up) in tamari, and 2 tsp ground fresh ginger with minced garlic. Saute in 2 tsp. oil onion, and celery till begins to brown. Add scallions, red pepper, and mushrooms. When crisp tender, remove from pan.
Add 1 more tsp of oil. Add chicken. Cook until no longer pink. Add cornstarch mixed with water. Add veggie mix. Cook for a few more min.
