Introduction

This is really good. You have to add your own tortillas and cheese because the calories can really vary from brand to brand. This can also be eaten as a variation on scrambled eggs. Number of Servings: 8

Ingredients

    6 Large Eggs
    1/4 C Light Sour Cream
    Salt and Pepper to taste
    1/4 C finely chopped Bell Peppers (any color)
    1/4 C finely chopped Onion
    1/4 C Low Fat Bacon Bits

Directions

-Crack the Eggs in a bowl, add the Sour Cream, and scramble them with a fork or whisk until well blended.
-Spray a large skillet with cooking spray and add the Peppers, Onions, and Bacon Bits.
-Cook the vegetables over medium heat until the onions get translucent.
-Pour the egg mixture over the vegetables and sprinkle salt and pepper over the top.
-Cook the eggs, thoroughly scraping the pan, until they are almost completely done (They continue to cook for a few seconds after the heat is turned off).
-For Burritos, heat eight tortillas in a zipper seal bag in the microwave (less than 30 seconds to soften them).
-Put 1/8th of the eggs on each tortilla, then sprinkle cheese over them.
-Add hot sauce or salsa if desired, then roll the burritos and serve.

Makes eight burritos or four servings of scrambled eggs.
