Introduction

I like to do the calorie count per one mushroom so you can decide how many you want personally. It's easier to calculate. Ingredients

    15 whole medium mushrooms
    1 TBS. extra virgin olive oil
    1 medium onion, diced
    1 green pepper, diced(about 1 1/2 cups)
    1/2 tsp. black pepper
    1/4 tsp. cayenne pepper
    1 TBS. parsley, dried
    2 TBS. cilantro, dried
    1/4 cup lemon juice
    1/4 cup bread crumbs, plain
    8 oz. 1/3 less fat cream cheese, softened
    2 TBS. parmesan cheese, grated

Directions

Makes 15 servings.

Preheat oven to 350 degrees.
Clean mushrooms and carefully break off stems.
Chop stems, onions, and green peppers.
In a large pan, heat oil over medium high heat.
Add onions, peppers, stems, and spices.
Cook until onions and peppers are tender.
Turn heat off. Add lemon juice and bread
crumbs.
Mix in cream cheese and parmesan cheese.
Using a spoon, fill each mushroom with a
heaping portion of mixture.
Arrange mushrooms in spray oiled (Pam) baking dish.
Bake for 20 minutes. Serve hot.
