Sauteed Calabaza Squash

Introduction

Ingredients

    Calabaza Squash, 4 cup, sliced
    Indian Andhra mustard seeds ( small, dark brown) 2tsp, 2 gram(s)
    Asafoetida / Hing powder, 0.25 tsp
    *Hot fresh green Chili Peppers, 3 small, sliced
    Jaggery (dried sugar cane juice with salt) from 1lb bag of 23 cubes., 1 serving
    Kosher salt, 0.25 tsp

Directions

Heat olive oil in a Dutch oven, drop mustard seeds and krackle them. Add a pinch of hing powder, green chilies and drop the sliced squash pieces. Add half a cup of water, jaggery and salt. Mix everything and cook on high heat until the squash is cooked. Reduce the heat and cook some more till some of the squash slices are broken in to pieces forming a gravy and others are nice and chunky, but, soft and tender. Serve as a side dish with chappati or rice.
