I adapted a recipe from Bob's Red Mill Stone Ground White Rice Flour for White Rice Muffins. They are pretty good for my first attempt at a gluten free muffin. yes Geogirl! Add the vanilla indeed. Plus omit the butter and add non-fat youghurt instead. Lemon zest & juice [or use oranges.] Fresh ginger, cardamom & nutmeg too. I swap out the sugar and add dried apricots that have been rehydrated in boiling water. Could use dates instead. - 6/3/09

  • A very adaptable recipe and a much needed welcome treat for some of us that can't eat ordinary muffins and sweets and not too high in calories either. Will make it again - 4/3/09
