Hearty Pork & Red Bean Burritos

Introduction

These delicious burritos boast over 10g of fiber and nearly 30g of protein each! These delicious burritos boast over 10g of fiber and nearly 30g of protein each!

Ingredients

    4 whole wheat tortillas
    1 can red kidney beans
    8 oz. pork loin, sliced thinly
    2 tsp. cumin
    garlic salt
    1 tsp chopped fresh cilantro
    1 tsp olive oil

    Salsa
    light sour cream

Directions

Heat olive oil in skillet set to medium-high. Add pork loin strips, cumin, cilantro, and garlic salt to taste. Stir fry until pork is cooked through, about 7 minutes. Mash the canned red beans and add them to the skillet. Mix well and heat through.

Top each tortilla with 1/4 of the bean and pork mixture, and add .5 oz. shredded cheese. Serve with salsa and light sour cream on the side, if desired.

Recipe makes 4 burritos. Calorie count does not include sour cream.
