Mashed red potatoes with garlic and parsley

Ingredients

1 lb small red potatoes
1 cup water
1 chicken boullion cube
2 cloves of garlic
3 tablespoons chopped fresh parsley or one tablespoon of dried parsley
Directions
Wash and cut potatoes into 1 inche cubes. Do not peel.
Cover with water. Bring to a boil - simmer until cooked - about 10 minutes.
Meanwhile, bring 1 cup of water to a boil and disolve boullion cube in it. Remove from heat. If using dried parsley, add it to boullion.
Drain potatoes and return briefly to the saucepan to remove excess moisture.
Mash with a potato masher, or mix on low with an electric mixer. Add boullion mix a little at a time and then whip potatoes.
Use garlic press or finely chop garlic cloves. Add chopped garlic and parsley to the potatoes and mix until blended.
