Introduction

A delicious and low fat quiche that's very high in protein. Saving half the cheese to create a topping for the quiche maximizes the cheese flavor while keeping the total amount fairly low. Ingredients

    1.5 cups skim milk
    1 package of frozen spinach, cooked and drained
    1 cup egg substitute
    1 cup fresh mushrooms
    2 oz shredded Asiago cheese
    1/4 tsp salt
    2 Tbsp salt free Chicken Seasoning

Directions

Add salt to the frozen spinach and cook. "Drain" by squeezing the water out of it. Add chicken seasoning to the spinach.

thoroughly combine egg, milk, just half of the cheese, mushrooms, and spinach.

Pour mixture into a round pie plate sprayed with cooking spray. Sprinkle the remaining half of the cheese over the top of the quiche.

Cook on 375 for 40 minutes. Remove and let rest for about 5 minutes before serving.
