Ingredients

1 tbsp extra virgin olive oil
20g butter
Buffalo braising or stewing steak, 900 grams
lardons/pancetta 50g
Carrots, raw, 1 carrot (7-1/2")
Onions, raw, 1 large
Garlic, 3 cloves
Red Wine, 400mL
plain flour, 30 grams
salt and pepper
thyme, parsley, bay leaves
Directions
Pan fry the steak, lardons and vegetables in the oil and butter until browned. Move to the slow cooker and sprinkle in the flour while stirring. Add the wine, enough to completely cover the meat and veg. Stir well, then cook on high until the liquid is bubbling. Turn to low, stir well and replace the lid. Cook for at least 12 hours with occasional stirring. Serve with fresh bred and a fine red burgundy wine!
