Crustless Microwaved Seafood Quiche

Introduction

This quiche uses my Crab & Shrimp Salad along with the mushroom stems from my Seafood Stuffed Mushrooms to make this classy grab and go breakfast. This quiche uses my Crab & Shrimp Salad along with the mushroom stems from my Seafood Stuffed Mushrooms to make this classy grab and go breakfast.
Number of Servings: 8

Ingredients

    1 recipe of MRSDUDLEY Crab & Shrimp Salad

    1 oz fresh mushrooms, diced

    4 eggs

    1 C egg beaters

Directions

Makes 8 single servings.


Combine eggs and egg beaters in a blender or a large bowl blend/whisk until air has been incorporated and eggs are fluffy.


Lightly spray either two - 1quart microwaveable baking dishes or one - 2 quart dish whichever you desire with cooking spray.



Combine salad and eggs in the dish of your choice.


Microwave on full power for 1 minute and 30 seconds. Take dish out and lightly pull cooked eggs from the outside of the dish towards the middle of the dish.



Continue to microwave in 60 to 90 second intervals until the eggs have been fully cooked and have set. This should take anywhere between 3 and 5 minutes.


Take out of the dish and cut into single servings.
