Orange Soia or Tofu Chicken

Submitted by: JONE7007

Introduction

This wonderful easy recipe substitutes "Soia" similar to tofu for Chicken. I prefer the texture of the Soia but you could easily use tofu. This wonderful easy recipe substitutes "Soia" similar to tofu for Chicken. I prefer the texture of the Soia but you could easily use tofu.

    * 1/2 cup orange juice or juice from 1 orange
    * 1/2 teaspoon ground ginger

Directions

In a skillet or wok, cook the soia or tofu, carrots, and onions in oil until the onions are translucent and the soia/tofu is browned. In a small bowl, combine the cornstarch, orange juice, soy sauce and ginger until smooth. Pour over soia/tofu mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Serve over rice. Top with orange segments, walnuts and parsley.

Serve over rice.

****Make sure the carrots are sliced thinly or they wont cook through. You could add or substitute in a red bell pepper.
