Tigerlily's Lentil & Potato Soup

Introduction

Instead of brown rice, I added potatoes and eliminated the canned tomatoes to add more fiber and potassium for this recipe! I make this on Sunday so that I've got a healthy soup on hand for a quick lunch or snack during the week.

I like to soak lentils for about an hour prior to using them in recipes, despite what the packaging tells me. :o)

Ingredients

    1 large onion, chopped
    2 cloves garlic, chopped
    1 cup dried green lentils
    2 medium white potatoes, peeled and chopped into 1" cubes
    3 teaspoons Knorr Chicken Bouillon
    8 cups boiling water


Directions

Spray a Dutch oven with non stick cooking spray and preheat to medium heat.

Add the chopped onion and garlic and cook until they're translucent.

Drain the lentils and add to the onions and garlic.

Add the cubed potatoes.

Then dissolve the bouillon in the boiling water and add to the Dutch oven. Bring to a boil for about 10 minutes stirring often. At this stage, I like to add a couple of dried bay leaves [which I remove once the soup is done].

Reduce heat, cover, and simmer for about 45 minutes or until both the lentils and the potatoes are good n' soft/cooked through.

Recipe yields approximately 8 1-cup servings.
