Roasted Chickpeas (Garbanzo Beans)

Ingredients

    15.5 oz can garbanzo beans
    1 T. olive oil
    1 T. chili powder (or to taste)
    1 T. garlic powder (or to taste)
    salt & pepper to taste

Directions

Preheat oven to 450F. Place all ingredients in a single layer on a baking pan. Bake for 25 minutes ~ turn oven off, but leave pan in oven until there is no longer any heat.

You can experiment with different seasonings to taste. Great for a snack or a quick pick-me-up!

    I was a little concerned as I was making these because they really smelled garlicky BUT they are GREAT! Crunchy, spicy and good for you - what a combo! I will definitely make again and play with the seasonings I use. - 5/23/08

  • I make these a lot with different spices. A nice substitute for chips, though I will say that the first time I had them I didn't like them. It took another try, but now I really love them. Great when you want something crunchy salty and spicy. - 7/1/09

    I have some in the oven now on 425 for 20 minutes instead, and I used Mrs Dash Table Blend for the seasoning, they smell terrific this time! - 6/9/08

  • I made this last night only instead of chili powder i used ground rosemary and then after baking I added a little grated ramano cheese. They are a great snack. I left mine in a little to long and they were really dry. Next time I will check them a little earlier. Thanks for the resipe. - 11/19/07
