Chewy Banana-Date Cookies

Introduction

Number of Servings: 24

Ingredients

    3 ripe bananas
    1 c. dates, pitted and chopped
    1/3 c. applesauce of your choice (I used chunky original - very tasty!)
    2 c. dry quick oats
    1 tsp. vanilla extract
    1 tsp. ground cinnamon
    1/2 tsp. ground nutmeg

Directions

*Makes 24 medium-sized cookies*

Mash banana in a medium bowl.

Add vanilla, spices, and applesauce, stirring to well combine. Then add dates and oats, stirring to evenly distribute fruit and moisten oats.

Let stand in refrigerator for 15 minutes. Preheat oven to 350 degrees.

Drop 2-3Tbsp. cookies onto a cookie sheet sprayed with cooking spray. Cookies will not spread while cooking, so flatten or mound to your desire before putting in oven.

Bake for 20 minutes or until cookies are lightly browned. Cool on a rack, and enjoy!
