IntroductionGreat-tasting muffins packed with whole grain and fruity goodness. Great-tasting muffins packed with whole grain and fruity goodness.
3/4 cup sweetened applesauce
1/3 cup fat-free (skim) milk
2 tablespoons vegetable oil
1 egg or 1/4 cup fat-free egg product
3 cups Curves Whole Grain Crunch cereal or Kashi GoLean Crunch, slightly crushed
1 1/4 cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 cup sweetened dried cranberries
1/2 to 1 teaspoon coarse sugar or granulated sugar
2. In large bowl, mix applesauce, milk, oil and egg until blended. Stir in remaining ingredients except coarse sugar just until moistened. Divide batter evenly among muffin cups. Sprinkle with coarse sugar.
3. Bake 18 to 22 minutes or until golden brown. Makes 12 muffins.
