Reynolds Chicken Jambalaya

Ingredients

    1 Family Size package Zatarain's Jambalaya Mix (12 oz. box)
    2 C frozen sweet corn
    1 15.5 oz. can of beans (I used dark red kidney but I think black would be even better)
    2 large boneless, skinless chicken breast

Directions

Cook according to package directions (I skipped the oil).

While the water is coming to a boil, microwave or grill the chicken breast.

When you add the rice mix to the boiling water, also stir in the corn, beans, and cooked/chopped chicken breast (chop the chicken breast into small chunks after it is cooked).

Adding the chicken and corn helps lower the per serving sodium a little and also adds protein and vitamins with only a few extra calories. It also makes our kids enjoy the spices instead of being overwhelmed.

If you're not watching calories, this is really good sprinkled with cheddar cheese!

This makes about 10 one-cup servings.
