Introduction

These muffins beat the heck out of crappy little 100 calorie packs. Fewer than 100 calories and 2 grams of fat per muffin. Two makes a great breakfast, one makes a great snack! Try them spread with low-fat cream cheese or sprinkled with cinnamon and Splenda. These muffins beat the heck out of crappy little 100 calorie packs. Ingredients

    1 3/4 c. Arrowhead Mills All-Purpose Baking Mix
    1/4 c. Splenda granulated
    1 large egg
    2/3 c. nonfat milk
    1/4 c. Dannon Light & Fit vanilla yogurt
    1 c. Dole frozen raspberries
    1.5 oz or 1/4 c. semisweet chocolate chips, chopped into small pieces (or mini chips)

Directions

1. Preheat oven to 400F.
2. Gently mix all ingredients, except berries and chocolate chips. When it's mixed well, fold in berries and chips.
3. Divide batter into 12 prepared muffin tins, sprayed lightly with non-stick cooking spray.
4. Bake for 20 - 25 minutes, or until done.

Notes: This recipe uses Ghiradelli semi-sweet chocolate chips in the ingredients list. Nestle or other may vary. Chopping them is optional but I find that when they're in shards they distribute better and you get more chocolate in every bite.

1 c. fresh raspberries has less protein, fiber, carbs, and calories than frozen, and contain less moisture.

If using unflavored yogurt, add 1/2 tsp vanilla extract.

These muffins are NOT VERY SWEET. They have a good flavor as they are, but if you want them sweeter, try adding 1/3 or even 1/2 c. Splenda instead of 1/4 c.
