Introduction

This is an Ethiopian dish that I have when I eat out. It is a mixture of collards and beef. There is an ingredient I could not add here called Niter Kebbah which is a seasoned butter. I just say unsalted butter but there is a separate recipe for the Niter Kebbah. This is an Ethiopian dish that I have when I eat out. It is a mixture of collards and beef. Ingredients

    Collard Greens cleaned
    Diced beef
    Large Onion
    Green Peppers
    Salt
    Pepper
    Niter Kebbeh
    Scallion
    Serrano Pepper

Directions

Clean and chop collard greens. Place them in large pot and simmer for 10 minutes. Do not add water. Enough water clings to the greens in cleaning process. Drain and set aside. In Dutch oven, saute beef, onion, peppers and salt and pepper until beef is brown. Add mustard greens and remaining ingredients. Cook for 1 hour or until liquid in pan has evaporated.
