Bean Dip

Introduction

Quick, easy, tasty. Quick, easy, tasty.
Number of Servings: 15

Ingredients

    30 oz can refried beans
    1 can tomatoes with jalapeno peppers, drained
    1 can yellow corn, drained
    1/2 cup diced roast beef
    8oz brick light cream cheese
    1/2 tsp cumin
    1 tsp dried cilantro or 1 Tbs fresh

Directions

Mix all ingredients together in 2 1/2 - 3 quart saucepan. Heat over medium heat until bubbly. Dip with baked tortilla chips, baked corn chips or pita chips. (dippers not included in nutritional information) Also good as a quesadilla filling. This is mildly spicy - feel free to add more spice if you like it hotter! Chili powder, cayenne, chipotle tobasco... Makes about 15 1/2 cup servings
