Four-Cheese Chicken Pasta Bake

Introduction

modified from 'Taste of Home' casseroles cookbook modified from 'Taste of Home' casseroles cookbook
Number of Servings: 8

Ingredients

    10 oz. uncooked pasta
    1 can (10-3/4 oz) cream of mushroom soup, undiluted
    1 pkg (8 oz) cream cheese, cubed
    1 jar (4-1/2 oz) sliced mushrooms, drained
    1 cup milk
    1/2 cup butter
    3 cloves garlic
    3/4 cup grated parmesan cheese
    1/2 cup shredded part-skim mozzarella cheese
    1/2 cup shredded swiss cheese
    2-1/2 cups cubed cooked chicken breast
    TOPPING:
    1/2 cup seasoned croutons, crushed
    2 tbsp butter, melted
    2 tbsp parmesan cheese

Directions

cook pasta until nearly done

combine the soup, cream cheese, mushrooms, milk, butter, and garlic. Stir in cheeses, cook & stir until melted. Add the chicken, heat through, drain pasta & add to sauce.

Transfer to a baking dis. combine topping ingredients, sprinkle over mixture, cover & bake at 350* for 25 minutes. uncover & bake for 5-10 minutes longer until browned.

Yield 6-8 one cup servings

  • I think I'd like to try it but it has a lot of fat calories, cholesterol, and a lot of salt in it. I'd probably have to tweak it some first. I wonder if it would taste as good with changing so many ingredients to a low cal, low fat version. What do you think? - 3/2/09
