Number of Servings: 2

Ingredients

    * White Rice, long grain, 1 cup
    * Cabbage, fresh, 1 cup, chopped
    * Carrots, raw, 1 cup, strips or slices
    * Zucchini, 1 cup, sliced
    * Celery, raw, 1 cup, strips
    * Olive Oil, 1 tbsp
    * Ginger Root, 10 slices (1" dia)
    * Onions, raw, .25 cup, chopped
    * Garlic, 3 cloves, minced

Directions

Steam rice until cooked fully

Heat oil and cook onions, garlic and ginger until tender.

Stir oil mixture into the veggies.

Bake veggies for 10 minutes, or until tender. Be sure to stir veggies every 2-3 minutes to avoid burning and to give even cooking.

Serve veggies over rice.
