Banana Bran Muffins

Ingredients

1.5 cups bran flakes
1 cup ripe bananas, mashed (about 2)
.5 cup 1% milk
.5 cup egg substitute
2 Tbsp LIghter bake fruit sauce (or applesauce)
1 cup all-purpose flour
2 tsp baking powder
.25 tsp baking soda
.25 cup flax seed meal
.125 (1/8) tsp nutmeg
Directions
Preheat oven to 400 degrees. Set 14 foil muffin cups on a baking sheet.
Beat egg substitute with an electric mixer for about 1 minute until frothy. Beat in the mashed bananas until smooth. Add milk, Lighter Bake (or applesauce) and cereal. Mix briefly to break up cereal and let stand for 5 minutes to soften.
In another bowl comine flour, flax meal, baking powder, baking soda, and nutmeg.
After 5 minutes, beat liquid mixture another 30 seconds. Then, using a spatula, fold in the dry ingredients until just barely moistened. Spoon the batter into 14 muffin cups. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
