IntroductionUsing leftover mashed potatoes, add a few more ingredients, cook em up, yum. Using leftover mashed potatoes, add a few more ingredients, cook em up, yum.
1 Cup Mashed Potatoes
1/4 C. chopped onions
1/8 c. white flour
1 large egg
1 tsp. dried parsley (or more for fresh)
1.4 tsp. Salt
Pepper to taste
Any other spices of your choice
*Crisco Pure Vegetable Oil, 3 tbsp
Mix all ingredients. Mixture will be a thick, batter-like consistency. Pour batter into small disk shapes in hot oil in pan. Don't overcrowd pan, allow space between each pancacke for even cooking.
Lower heat to med - med/low, cook til browned and heated through. Season additionally, as soon as you remove from the pan, if desired.
Serve with lowfat sour cream, ketchup or whatever you like.
