Cheese & Bean Quesadillas

Ingredients

    1/4 Cup refried beans
    4 flour tortillas (6-8")
    3/4 Cup shredded cheddar cheese
    Bottled salsa (optional)

Directions

1. Spread 1 Tablespoon of the refried beans on one half of a tortilla.
2. Place bean-topped tortilla, bean side up, in a medium skillet. Sprnkle one-quarter of the cheese over the bean-topped tortilla.
3. Cook over medium heat about 3 minutes or until cheese begins o melt. Fold tortilla in half. Turn and cook 1-2 minutes more or untl golden brown. Repeat with remaining tortillas.
4. To serve, cut each quesadilla into thirds. If desired, serve with salsa.
