Easy Chile Rellenos

Introduction

I love crunchy rellenos, and found this easy way to make them nice and crispy.
I used jalapeno pepper's to enter the recipe, but I really like using poblano or anaheim peppers the most.
I love crunchy rellenos, and found this easy way to make them nice and crispy.
I used jalapeno pepper's to enter the recipe, but I really like using poblano or anaheim peppers the most.

Number of Servings: 6

Ingredients

    6 Jalapeno, Poblano or Anaheim Peppers
    6 Tbsp low fat Cream Cheese - softened
    1 cup Cheddar Cheese
    6 Egg Roll wrappers
    2 Tbsp Olive Oil

Directions

Remove tops and seeds from peppers.
In a bowl mix cream cheese and cheddar cheese.
Stuff peppers with cheese mixture.
Lay pepper on egg roll wrapper and wrap around pepper, sealing ends with a bit of water.
Heat oil in pan and fry peppers until crispy on all sides.
Optional step BEFORE cleaning peppers: Roast peppers in toaster oven or in a dry pan over med-high heat - roast until pepper's are charred. Place peppers in a ziplock bag and seal, rub to remove skin from peppers.
Serves 6.
