Chickpea Salad

Introduction

An easy lunch that packs in fiber and vegetables! An easy lunch that packs in fiber and vegetables!
Number of Servings: 1

Ingredients

    1/2 cup garbanzo beans
    1 tsp olive oil
    1 tbsp balsamic vinegar
    1/2 cup fresh broccoli, chopped
    1/2 cup summer squash, chopped
    3 kalamata olives, sliced
    1/8 cup reduced fat feta cheese, crumbled
    Pepper, garlic powder, onion powder

Directions

Drain and rinse chickpeas and put in bowl. Add broccoli, squash, olives, and feta cheese. Add olive oil and vinegar; toss to coat. Season to taste. Refrigerate for 1/2 hour to chill.

Makes 1 serving.
