Ingredients

    2 oz Canadian bacon, chopped
    ½ cup onion, chopped
    1 garlic clove crushed
    2 cups broccoli roughly chopped
    3 cups low sodium stock
    1 can butterbeans (lima beans), drained
    1tsp dried rosemary /1 tsp fresh rosemary, chopped
    freshly ground black pepper

Directions

1. Spray pan with cooking spray and fry the bacon onion and garlic.
2. Add the broccoli and cover to sweat for 5 mins.
3. Add stock and bring to boil
4. Add butterbeans and rosemary and season with pepper.
5. Cover and simmer until broccoli is tender.
6. Liquidise for a delicious creamy textured soup
