Black Olive Casserole

Introduction

A favorite from my childhood. Not exactly diet-friendly, but could be made healthier with whole-wheat and leaner meat. However, this is how my mother made it, and it's a nice splurge once in a while! A favorite from my childhood. Not exactly diet-friendly, but could be made healthier with whole-wheat and leaner meat. However, this is how my mother made it, and it's a nice splurge once in a while!
Number of Servings: 8

Ingredients

    Ground beef, 16 oz
    Elbow Macaroni, enriched, 16oz
    Black Olives, Sliced - 2 small cans, drained
    Creamed Corn, 1 cup
    Tomato Soup, 1 cup
    Parmesan Cheese, grated, 1 cup

Directions

1. Preheat oven to 350F
2. Brown ground beef; cook macaroni according to directions until firm (will cook more in oven)
3. While waiting for beef and macaroni to cook, combine other ingredients in the casserole dish you'll be baking in; save a little of the parmesan cheese to sprinkle on top.
4. After draining beef and macaroni, mix thoroughly into casserole dish.
5. Sprinkle remaining parmesan cheese on top.
6. Bake at 350F for 30 minutes.
7. Enjoy!
