2/3 cup bulgar
1 cup water
1 tsp minced garlic (about 1 clove)
2.25 ounces pine nuts
2 Tbsp lemon juice
2 Tbsp olive oil
Salt and peper
Optional; 1 Tbsp chopped cilantro
350 grams (about 4 cups) of cooked fava beans
Meanwhile toast pine nuts in the oven at 350 degrees for 8-10 minutes until golden brown.
When the water is absorbed, add the garlic, lemon juice, olive oil, plus salt and pepper. Mix well to combine.
Stir in pine nuts, fava beans, and optional cilantro.
Allow flavors to blend before serving.
Makes 7 servings 1/2 cup each.
