Reynolds banana bread

Introduction

Delicious and filling desert or snack. My kids LOVE it and it's not too bad for you. The serving size is generous. Delicious and filling desert or snack. My kids LOVE it and it's not too bad for you. The serving size is generous.
Number of Servings: 20

Ingredients

    3 C mashed bananas (I had 1 C bananas and subbed 2 C applesauce for the rest--it turned out almost as good)
    1 C oil
    3 eggs
    1 tsp. vanilla
    1 C milk (I used light vanilla soy)
    1 C oats
    3 C flour
    1 1/2 tsp. soda
    1 Tbs baking powder
    1 1/2 tsp. salt

Directions

Soften the oats in the milk. Set aside. Combine wet ingredients and mix well. Add oats and milk. Miex in dry ingredients. Makes 2 large loaf pans or a 9x13 casserole dish. Bake 40 minutes at 375 (maybe a little less with bread pans; really check the middle for doneness in a casserole dish). 20 large pieces in a casserole dish (more like cornbread chunks than bread slices). Smaller pieces would lower the calorie count. Enjoy! (My husband spreads butter on, but it's so moist and flavorful already that these really don't need it!)
