Peanut Butter Soup

Introduction

Ingredients

    Cut chicken legs into bite size pieces about 2 inches in size. Remove all skin and fat, but leave the bones (they add flavor). Use 2 bouillon cubes to season the chicken. Brown in a large skillet using 1/4 cup of the olive oil, set aside. In a large dutch oven, add 1/4 of the (onions, garlic, 1 habanero pepper whole, sweet red pepper and saute until translucent. Take remaining onions, garlic, bell pepper and hot pepper and blend until smooth. When vegetables have become transparent, add the squash and blended vegetables. Add chicken broth. Add peanut butter, tomatoes, remaining bouillon cubes, smoked turkey and chicken. Cook for 1 hour on simmer. Serve over steamed white rice.

Directions

Makes 12 (1cup) servings. Served over steamed white rice.
