Introduction

A popular Buffet item of the Indian continent. Can be served as a breakfast, lunch or dinner item too!

NOTE: Preparation time is only for soaking and letting the batter stand overnight. Steaming time is only 15 to 20 minutes.

Number of Servings: 16

Ingredients

    2 cups long grain rice, soaked for 6-8 hours
    1 cup urid dhal, soaked for 6-8 hours
    1 1/2 teaspoon salt
    Mazola spray

    Equipment needed: Idli stand & Double Boiler (see the picture on the right)

Directions

1. Place the soaked rice in a blender with 1/2 cup of water and grind it to a smooth consistency.
2. Remove the rice batter into a mixing bowl.
3. Place the urid dhal in a blender with a cup of water and grind it to a very smooth consistency.
4. Add the soaked urid dhal batter to the mixing bowl along with salt.
5. Mix well, cover, and let it stand overnight in a nice warm place (preferably in an oven with the light on, but do not bake).
6. Coat the idli plate with mazola spray.
7. Stir the batter and spoon it into the idli stand
8. Place 2 cups of water in a double boiler, place the idli stand in it, cover and steam for 15 minutes.
9. Makes about 16 idlis

NOTE: Serve it with your favorite lentil stew or South Indian Sambaar. Also tastes great with chutney powders of the Indian continent.
