Number of Servings: 20

Ingredients

    * unsweetened coconut flakes, 1.5 cups (remove)
    * Coconut Oil, 5 tbsp (remove)
    * coconut milk light - native forest organic kroger, 0.33 cup (remove)
    * stevia, 1 serving (remove) TO TASTE
    * carob chips grain sweetened, 1 cup plus a few more (remove)

Directions

Melt coconut oil. Stir together coconut oil, coconut milk, unsweetened coconut, and stevia forming a smooth paste. Drop dollops of the coconut mixture on to aluminum foil or waxed paper, and shape into flat logs with your fingertips. Freeze for 5 minutes, or until filling is firm and cold. Microwave carob chips for 30 seconds on HIGH, and stir until smooth. Adjust sweetness level if necessary with stevia. Dip cold filling into chocolate and return to wax paper. Wait a minute or two for chocolate coating to harden, and enjoy!
