Introduction

With the burst of blueberries and the bright hint of orange juice, these delicious and easy pancakes will have your whole family asking for more.
Low in calories, fat, sodium and cholesterol, these are a great breakfast addition for anyone!

Number of Servings: 10

Ingredients

    1 1/2 C whole wheat flour
    2 tsp baking powder
    1 tbsp cornstarch
    dash of salt
    1 tsp vanilla extract
    1 tbsp orange juice (preferably fresh)
    1 1/2 C Light Plain Soy Milk
    3/4 C frozen blueberries, thawed

Directions

In a medium bowl, combine all your dry ingredients. Place blueberries in a small bowl and coat with one spoonful of dry mix; it will keep from turning your batter blue.
Add the wet ingredients; stir to combine. Mix in blueberries.
