This tasty salad is a nice change-up in my vegetable routine

Number of Servings: 6

Ingredients

    4 cups shredded carrots
    1 cup chopped fresh parsley
    4 Tbs finely minced ginger
    2 tsp safflower oil (or substitute any oil)
    1 tsp sesame oil
    1 Tbs sesame seeds
    4 Tbs rice vinegar
    1 Tbs soy sauce

Directions

Mix all together. Let sit to mingle flavors an hour or more before serving, if possible. Great side dish or snack!
