Easy Italian Chicken Primavera

Ingredients

    3 plum tomatoes, chopped
    1 medium zucchini, chopped
    1 cup chopped, draind marinated artichoke hearts
    1 clove garlic, finely chopped
    6 oz. chicken breast, cooked and cut into chunks
    2 T. fresh basil, chopped
    2 1/2 cups whole wheat spaghetti, cooked
    1 T. grated parmesan cheese

Directions

Cook and stir tomatoes, zucchini, artichokes and garlic in large nonstick skillet on medium-high heat 5 minutes or until zucchini is crisp-tender. Add chicken and basil; stir. Cook 5 minutes or until heated through, stirring occasionally. Serve over the hot, cooked spaghetti and sprinkle with cheese. Cover and refrigerate leftovers for a cold pasta salad the next day!
